Super Creamy and Comfy Courgette Carbonara

I can't remember the first time that I ate Creamy spaghetti Carbonara, well, it must be a long time ago, ^^. I don't know the time, but one thing that I'm sure, I like the taste of it.
I tried many recipes, some are good, some are so-so, but I always look for the one with the creamiest texture. You can find Carbonara recipes with different ingredients, many people say that the original one doesn't include cream in the ingredient list, the creamy texture comes from the under cooked egg. Well, I don't mind about being traditional or not, hehe, as long as it's delicious. 
Creating that creamy texture in the easiest way is what I want, with some ingredient like cream, the sauce will be quite thin, but with something with more body like Mascarpone, it can be the answer. And the other point is don't let the egg scramble, be sure to keep the egg from the direct heat. 
I found this dish very comforting, ^^, the sauce is super creamy, with light flavor of courgette and saltiness from the bacon, a touch of freshly ground black pepper make everything balance. Even my niece doesn't like the vegetable, she loves this dish, and ate without telling her mom to remove the courgette out, hehe. 
 Because I don't eat much, this recipe serve 2 for me, but you can double (or even triple) it if you want. 

 Courgette Carbonara 
Serves 2


125g ................................ Spaghetti
1/2tbsp ........................... Olive oil
70g ................................... Bacon, cut into pieces
1/2 ................................... Courgette (Zucchini), grated
1/4tsp ............................. Garlic, finely chopped
1 ....................................... Egg
50g .................................. Mascarpone cheese
15g .................................. Parmesan, grated
.......................................... Salt and pepper

Boil the spaghetti, by bringing large pan of water to the boil, add pinch of salt, add the spaghetti and return to the boil. Simmer for 10 minutes or until it's just tender.
Meanwhile, heat the oil in a frying pan over a medium heat, add the bacon and fry until golden. Add the courgette and garlic and fry for a couple of minutes.
Mix egg with Mascarpone and parmesan in a large bowl, season with salt and pepper (salt it lightly,^^ ).
As soon as the spaghetti is cooked, remove it from the water and put it straight into the pan with bacon and courgette, and toss around.
Pour the spaghetti mixture into the egg mixture bowl, toss together.
Sprinkle with freshly grounded black pepper and more salt if you like. Serve immediately.
